Sugar Cookie Icing

Makes 24 cookies, 1 mg Azuca THC or 2.5 mg CBD each
½ cup powdered sugar
2 Tbsp + ¼ tsp Azuca THC simple syrup or Azuca CBD simple syrup
⅛ tsp vanilla extract
1 Tbsp water
2 candy canes or 5 peppermint candies
- In a medium bowl, stir together powdered sugar, Azuca THC simple syrup, vanilla extract, corn syrup, and water.
- If icing is very thick and hard to stir, whisk in another ½ Tbsp of water. Continue to do so until you have achieved the desired texture (a drizzle from the whisk should hold its shape briefly before reincorporating into the icing).
- Between two pieces of parchment paper, crush the candy canes/peppermint candies with the bottom of a large bowl, or another heavy object.
- Cover your Everest sugar cookies with 1 tsp icing then sprinkle with crushed peppermint pieces.
